Chia Seeds Pudding Recipe
Ingredients
- ¼ cup chia seeds
- ¼ cup dried shredded coconut, unsweetened
- 1 cup unsweetened almond, hemp, or other nut milk
- 4 dates, pitted
- ¼ tsp vanilla bean powder
- ⅛ tsp powdered ginger
- ⅛ tsp cinnamon
- Optional superfood boost: 1 tbsp raw cacao powder
Method
- Place the whole chia seeds and shredded coconut (if using) into a bowl.
- Add the nut milk, pitted dates, spices, vanilla bean powder, and cacao (if using) to a blender. Blend until completely smooth.
- Pour the blended milk mixture over the chia seeds, stir well, and leave to sit for 10–15 minutes — or refrigerate overnight for a creamier result.
- After 10 minutes the pudding will retain a slight crunch; by the following morning it will be soft and smooth throughout.
- The chia seeds pudding will keep well in the refrigerator for 4–5 days.
- Serve chilled or at room temperature, topped with fresh fruit as desired.
