MAKE YOUR OWN KOMBUCHA
Kombucha is one of the healthy drink you should try to take once a day if possible. Making a homemade kombucha is very easy; all you need is tea, sugar, a SCOBY and patience.
SCOBY is a Simbyotic Colony of Bacteria and Yeast, which ferment the sugar, metabolizing it into a slightly carbonated and tangy drink, rich with probiotics and beneficial acids.
You can buy the SCOBY online, or ask someone who has it to give you a piece, or you can make it by yourself.
HOMEMADE SCOBY:
Buy a bottle of kombucha (preferably the plain one, without flavor added) and pour the content into a glass jar (Mason jar or into one of those big glass jars used for pickles).
Put a piece of clean cloth, like a piece of a cotton t-shirt or a cheesecloth, on the mouth of the jar, seal it with a rubber band and place the jar in a dark and dry place (the cupboard is perfect). Let it rest for at least 2 weeks (this time will vary depending on your location and on the quality of the starter), without moving or shacking the jar.
After that time you will spot a sort of pale, weird and flat pancake that looks like a jelly fish. This is your SCOBY.
Then you can go to STEP 2:
Boil 8 cups of water in a large pot.
Add 8 green tea bags (unflavored) and allow steep for 20-25 minutes.
Remove the tea bags and add one cup of sugar. Stir well.
The tea should be at room temperature, before pouring it into a crock or a one-gallon mason jar.
Add 8 more cups water to the jar and place the SCOBY into the jar, cover with a piece of old t-shirt and seal with a rubber band.
Make it ferment for 7-14 days.
How do you know the kombucha is ready?
Simply move the SCOBY aside and take a little out with a clean spoon.
The taste of the kombucha may be slightly carbonated and unflavored, and you may drink it as it is.

Ingredients:
1 pear, cored and then thinly sliced.
2 tbsp of agave syrup (or honey)
4 tbsp of raw almonds, or cashew nuts
Cinnamon powder
Lemon juice

Steps:
1. Marinate the pear into the lemon juice.
2. Then put the first slice onto the plate, sprinkle with a bit of the nuts, drizzle with agave and cover with another slice of pear.
3. Continue until you finish all the ingredients.
4. Sprinkle with the cinnamon (one small pinch) and serve this easy and delicious fruity dessert.
If you don’t have pears, you can use apples.

Here’s a quick and easy recipe for a lovely and healthy soup.
For one serving
1/4 cup water
1 medium beet
1 medium carrot
2 tbsp red vinegar
2/3 dates
One spring onion
3 tbsp of orange juice (home made)
Raw cashews, as necessary
One punch of sea salt
3 tbsp olive oil
Peel and cube the beet and the carrot.
Put them into a blender, add the remaining ingredients and blend until the soup is creamy.
If you want your soup more liquid, add some water.
Serve it right away.
Keep refrigerated.

A delicious and tasty patè, cruelty-free with all the nutrients and enzymes we need.
For 3 servings
230 grams of raw sunflower seeds
100 grams of raw cashews
2 large celery stalks
2 carrots
Half onion
1 tbsp lemon juice
Sea salt, one pinch
3 tbsp olive oil
Process the sunflower seeds and the cashews in a food processor until they turn into a nutty flour.
Chop the carrots, celery, onion and add to the food processor and pulse until the mixture blends smoothly.
Add the lemon juice, the oil, salt and pepper (if you like it) and process until mic tire reaches the texture you prefer.
Serve it with flaxseed crackers and fresh vegetables.
This patè is delicious also as a filling for raw ravioli: put a generous slab of it into a big salad leaf, roll it and eat it right away!

Ingredients needed:
• 2.2 lbs / 1 kg of onions
• 101 oz / 3 liters of water
Method of preparation:
Remove onions’ moustache and skin then cut them into four pieces. Put the onion pieces in a pot together with the water and cook until the water starts boiling. Continue to cook until there is half of the water left. Let the mixture cool then strain it.
Drink one and a half glasses of the resulting liquid two times a day. You can improve this beverage’s taste by adding honey and/or lemon juice.
“Grandma’s Earache destroyer”
An old Grandma’s recipe for an earache is to wrap half a cut onion in a cloth and place it on the affected ear!
